Billy McGlinn, owner of Sea Stocks, has supplied Macdonald Drumossie Hotel with the finest fresh seafood for many years. Former chef Billy provides us with salmon from the western Highlands and islands of Scotland, wild halibut from the Shetlands, velvet and brown crabs from the crystal clear waters around Ullapool, and langoustines and scallops from Scotland’s pristine north coast.
Billy’s company also supplies Drumossie with his luxury shellfish stock mix, a truly magical base for some of the acclaimed dishes served up by executive chef Euan Walker in our restaurant The Grill Room.
