Meet The Drumossie Team

Stephane Portes – General Manager

Paris-born, Stephane Portes has worked at both The Ritz and The Savoy in London, and for 10 years of his career was the head of hospitality at the House of Lords. Having worked with the Macdonald brand for over five years, he is now looking forward to this new opportunity at the Drumossie Hotel for both personal and professional reasons. Having worked all over the world, including Argentina, Hong Kong and New York, alongside having a Master of Business Administration under his belt, Stephane has a wealth of knowledge about creating a memorable hospitality experience. Stephane is looking forward to continuing to provide a Highland welcome to all those that come to the Drumossie Hotel and being an integral part of the community of Inverness.

Euan Walker – Executive Chef

The former Young Highland Chef of the Year and Rising Star of the Year at the 2018 Highlands & Islands Tourism Awards started his award-winning career under the guidance of his father. At the age of 17 he joined the team at Drumossie Hotel as a commis chef where he worked under the tutelage of Kenny McMillan and worked hard to progress to the position of sous chef. After leaving to gain valuable experience in other settings, Euan made a triumphant return to Drumossie as head chef and, more recently, executive chef.

Stewart McPherson – Head Chef

After starting his career with Kenny at Macdonald Aviemore Resort in 2007, Stewart moved to Drumossie Hotel where he progressed to the role of executive chef, mentoring chefs who went on to win prestigious awards. After a spell away from Drumossie, Stewart has now returned as Euan’s right-hand man, continuing his long and successful association with the hotel.

Kat Wardrop – Operations Manager

Kat is ultimate proof that the Drumossie Hotel team really is a family – she is executive chef Euan’s sister. Former chef Kat joined the team in 2012 and progressed to the role of head pastry chef before a move to her current operational role, supporting the general manager, two years ago.

Zanetta Parzonka – Restaurant Manager

Zanetta joined the Drumossie Hotel team as a commis waitress over 10 years ago and has since moved through the ranks to her current role as Restaurant Manager. Zanetta commands a wealth of expertise inside the hotel, and is every bit as knowledgeable about the hotel’s unrivalled location, nearby wild foraging and our wonderful natural environment.

Marta Makowska – Front Office Manager

Marta first joined Macdonald Hotels & Resorts as a waitress at Macdonald Aviemore Resort in 2005. She moved to work on the resort’s reception before heading up the A9 to Drumossie Hotel almost a decade ago. Initially reception manager, she became our front office manager in 2015.
