We source our cheeses locally from Connage Highland Dairy, known for producing the finest organic artisan cheese in the Scottish Highlands.
Family owned and run since 2006 by Callum & Jill Clark, Connage is an award-winning cheese dairy situated on the family farm at Ardersier. Callum’s brother Cameron and his wife Eileen rear a 150-strong herd of organic dairy cows which graze the luscious clover pastures around the dairy and along the sea-spray misted shores of the Moray Firth.
The artisanal cheese-making process is a fine art. Traditional time-consuming, labour intensive techniques meet state-of-the-art equipment and temperature controlled environments in order to produce the very best organic, vegetarian cheeses possible.
The Connage range includes famous English cheddars, French classics, European delights and of course Scottish favourites. A stay at Drumossie wouldn’t be complete without savouring one of their special limited editions such as Nettle & Garlic Gouda.
