
A New Year Recipe To Secure Rosette

The kitchen staff at a new-look Shropshire hotel have set themselves an early New Year's resolution.
The creative team at the Macdonald Hill Valley Hotel, Golf & Country Club is eager to earn a prestigious AA Rosette in 2007 after the £13.5 million refurbishment and extension was completed in the summer.
John Badley, the Executive Head Chef at its sister hotel the Macdonald Albrighton Hall near Shrewsbury, is perfectly placed to offer guidance after earning two AA Rosettes in October.
Chef de partie Gary Turnbull, sous chef Sandra France, comi chef Daniel Nixon and demi chef de partie Nicky Ellis are determined to secure the Macdonald Hill Valley Hotel, Golf & Country Club an AA Rosette for the first time.
John said: "There have been massive changes made here following the multi-million pound investment and the kitchen team is catering for hundreds of people every day.
"The standard of the cuisine has increased tremendously and we have launched our new winter menu.
"There is a great team here who are thriving on the extra responsibility of catering for diners ranging from conference delegates to golfers.
"We are busily working towards gaining an AA Rosette in 2007. We don't know when an AA inspector will arrive and you only find out about their visit as they are about to depart.
"The Rosettes are coveted by everyone in the industry because they are the benchmark for high standards in restaurants ranging from the quality of the dishes created to the level of service.
"But I have every confidence in the kitchen staff and it would be fantastic to be part of the team that secures the hotel its first AA Rosette."
