
Macdonald Cardrona awarded First AA Rosette

Ivor Clarke, head chef at the Macdonald Cardrona Hotel in Peebles, and his team are celebrating after being awarded their first AA Rosette for Renwick's Restaurant.
The award comes as Ivor celebrates 10 years with Macdonald Hotels and on the first anniversary of general manager, Iain Gray's, appointment at the hotel.
Renwick's Restaurant is fast becoming one of Scotland's top eateries. Ivor has developed an exquisite menu of traditional dishes with a contemporary twist. He uses fresh, wild ingredients to create classic brazen dishes such as brazed pork belly with butternut squash mash and sage and cider jus and brazed lamb shank with tomato and haricot bean casserole with rosemary jus.
With a team of nine kitchen staff, Renwick's Restaurant prides itself on its excellent staff training. Ivor said: "The team are all passionate about creating and serving good honest food. The AA Rosette is a tremendous achievement for them, especially as many are just starting out in the restaurant business. We will now work to raise our standards even higher and strive towards a second and third rosette."
Macdonald Hotels now boasts in excess of 35 AA Rosettes - one of the highest ratios for a UK hotel group. Iain Gray, general manager of the Macdonald Cardrona Hotel, said: "This now puts Renwick's Restaurant firmly on the map of Scottish restaurants and adds to Macdonald Hotel's impressive portfolio of AA accredited outlets. We are now finding more locals using the restaurant, as well as hotel guests, which proves it's becoming a firm favourite in the community."
