NEW RANGE OF VEGETARIAN MENUS LAUNCHED BY DEAN TIMPSON at THE COMPLEAT ANGLER

June 2007: Dean Timpson at the Compleat Angler, the famous Marlow hotel's brand new restaurant, is introducing a series of vegetarian menus to run in tandem with the existing. A vegetarian Tasting Menu, complementing Dean's show-case seven-course Tasting Menu is already a regular feature, and a la carte and set menus will be introduced this month.

Dean Timpson said: 'It still surprises me how few restaurants really take vegetarians seriously given the amount of people who choose not to eat meat and or fish. As a serious chef I want to ensure their gastronomic experience is equally exciting when they dine here. This is the first of many vegetarian menus to come as they will alter with the same seasonal regularity as my existing menus.'

Dean works with only the fresh seasonal ingredients available to him, some of which he grows in his own kitchen garden – a project Dean is developing. In addition, all the pastas, breads, pastries and puddings are made fresh each day. The common thread that binds every dish is Dean's simplicity in style. He strives to develop the natural flavours and textures of each ingredient by avoiding undue alteration and complex combinations, yet maintaining an element of surprise.

Examples of the vegetarian dishes served at Dean Timpson at the Compleat Angler include poached duck egg with asparagus and morel foam; fresh linguine with spring vegetables in a truffle butter sauce, and custard cream sugar cannelloni with honey poached pears.

Dean Timpson at the Compleat Angler opens Tuesday to Saturday for dinner, Wednesday to Sunday for lunch, and close on Monday.
