In his 30 years of experience, Martin has worked at top establishments in exotic spots including Bermuda, the Bahamas, Antigua and Barbuda, Barbados, Jamaica and the Maldives.

But that's not all. Martin is classically French-trained and learned his trade while working at the famous Fortnum and Mason and Café Royal in London, as well as cooking in various other top-quality kitchens around the West End. The South of France then beckoned, followed by a stint in four-star hotels on the discerning island of Jersey.

On his eventual return to the UK, Martin worked as Executive Head Chef with Stapleford Park, Barnsdale Hall and Belton Woods in the East Midlands.

Martin is delighted to have joined The Haycock Hotel and is using his exceptional international experience to create mouth-watering menus to please every diner. He uses only the freshest of ingredients, and keeps a strong emphasis on seasonal produce to ensure the fullest of flavours.
