Kevin's passion for good quality locally sourced ingredients is
key to producing the new menu's at Portal, sustainability and
provenance are also key to the menu's success.
Kevin's background has been from some of the classical hotels in
the UK, The Savoy Grill, Trump Turnberry, The Old Course,
Gleneagles and Luton Hoo to name but a few, and with most of these
properties being part of the golfing set, the menu's will be tuned
into the golf and leisure market to enhance the guest experience.
The menu's will change with the seasons, promoting the best that
can be sourced including wild fish and Scottish beef.
Kevin has brought with him some of the younger chefs he has been
training, and is very keen to work with local colleges and schools
to encourage youngsters to join the chef set, but believes they
have to know that the initial training is very complex and requires
dedication, but the rewards can be working in some of the most
famous hotel's over the world.
