Stuart Duff, From our Award-Winning Restaurant to Bespoke
Stuart Duff - who has worked with illustrious
restaurant stars including Albert Roux and Martin Wishart - has
a passion for creating exquisite dishes from the freshest seasonal
ingredients, sourced locally where possible.
He and his highly-skilled team were awarded the prestigious AA
Rosette award within four months of our hotel opening its doors -
and it has been re-awarded every year since.
Stuart has more than 25 years' experience in creating the
highest quality food, and he has worked in celebrated
establishments including the Grand Hotel in Amsterdam. He spent 15
distinguished years as Executive Head Chef with De Vere Hotels and
Crowne Plaza group before taking over the reins at
Macdonald Manchester Hotel & Spa.
Stuart is well-accustomed to rising to the special occasion,
weddings and lavish events. He has cooked for some of the most
famous guests in the world, including Her Majesty the Queen and
more recently the Princess Royal when she dined at our hotel.
Stuart selects wholesome local ingredients for their full
natural flavours and chooses suppliers who share our dedication to
food provenance. Sourcing our food from sustainable, reputable
suppliers has always been important to us - the chicken we use is
free-range, our pork outdoor-reared and we hold the Good Egg Award
for sourcing free-range, locally farmed quality eggs.
Our Executive Head Chef 's influence spreads far and wide. In
2012, Stuart became Macdonald Hotels' Regional Development Chef for
the North and Scotland, ensuring the supply of top-quality produce
and recruiting our company Head Chefs, always keeping us one step
ahead of the competition.
The result is a company-wide clutch of more than 40 AA rosettes
- more than any other hotel group in Great Britain. Stuart is the
nationally-respected champion of our company's impeccable
reputation for producing delicious foods, and we are delighted to
be able to offer his exceptional services to our guests.
