• The Balvenie

• Glenfiddich

• The Glenlivet

  In 1924, the Macallan Distillery was licensed to Alexander Reid, but under a different name: it started life as Elchies Distillery. Macallan sits in close proximity to a ford across the river Spey, the site originally held a farm distillery which was frequented by cattle drovers crossing the ford.   Aberfeldy has been open since 1898 and is little known as a single malt, due to the fact that it is best known as the backbone of the Dewar’s blend. • Brora

• Dalmore

  Dalmore was established in 1839 by Alexander Matheson, with profits made from the illegal trade of opium. The distillery sits on the banks of The Cromarty Firth overlooking the Black Isle. • Dalwhinnie

  Dalwhinnie is Scotland’s highest distillery (326m) and certainly one of the most remote. It is not quite Speyside, although its water source, the River Truim runs into the Spey. It is as such classed as a Highalnd Malt. 15 YEAR OLD (43%)

• Edradour

• Glenugie

  A very rare malt that is scarcely seen as the ditillery was closed in 1983 and later demolished. • Glenmorangie

• Stronachie

Island

• Highland Park

  Highland Park is Scotland’s northernmost whisky distillery, lying just to the North – east of fellow Orcadian, Scapa. Orkney is a rugged, beautiful island and the Highland Park distillery sits on a hillside near Kirkwall. Not far are sweeping plains of barley field and the rocky outcrops which protrude ominously from the ground. The sea beats the coast; her slaty air and the island’s geology contribute to the rich character of Highland Park single malts. The distillery draws its water from the mineral rich springs to the east of the distillery as well as the Crantit Springs. 12 YEAR OLD (46%)

• Isle of Jura

  In 1963, the spirit sprang from the Jura stills for the first time since the turn of the 20th century. The whisky distillery is the Isle of Jura’s one and only and underwent a substantial rebuild; nothing remained of the old buildings apart from the walls. The buildings were designed by William Delmé-Evans who would later be the principal architect of the Tullibardine distillery. It was two local estate owners, Robert Fletcher and Tony Riley-Smith who employed Delmé-Evans to renovate the distillery in a bid to boost the local economy. 10 YEAR OLD (40%), SUPERSTITION (45%)

• Talisker

  The malted barley used at the Talisker distillery has been bought in from Glen Ord since 1972, when Talisker’s maltings were abandoned. The malt has a peat level of 22 parts per million and the terroir is decidedly brazen; the Hebridean climate punishes the shores of the Isle of Skye, on which Talisker is the sole distillery. 10 YEAR OLD (45.8%)

Islay

• Ardbeg

  Producing arguably the peatiest of Islay whiskies, Ardbeg Distillery was founded in 1815 and for most of it’s existence has been producing whisky that was used exclusively in blends. • Bowmore

  The single malt whiskies from Lagavulin are among the worlds smokiest with thick lapsang souchong enveloping the palate without remorse. • Laphroaig

  Laphroaig is a distillery whose malts are massively individual and utterly distinctive. The distillery was founded in 1810 by brothers Donald and Alexander Johnston on what was originally a family run farm in a small bay on the southernmost tip of Islay.
