Born in Newcastle, he secured his first Head Chef role when he was just 23, and has worked in a number of prestigious AA Rosette-awarded restaurant and hotels over the last ten years including Gleneagles, The Mytton and Mermaid Hotel (Shropshire), and Longueville Manor (Jersey).

Macdonald Inchyra Hotel & Spa has been lucky enough to enjoy Callum's services as Head Chef since 2012. In that time, through Callum's passion and dedication, the Scottish Steak Club has been awarded its first AA Rosette, reflecting a commitment to quality food, cooked exceptionally well. This quality also flows through into the luxurious banqueting service for all events and weddings.

Callum and his talented team are now working towards their second rosette. They only use fresh, wholesome ingredients to create the fullest flavours in all of Callum's delicious menus, focusing on seasonal ingredients, sourced locally where possible for the most natural flavours.

Callum selects our suppliers with care to ensure they share his principles about high-quality food supply, and they include ScotBeef for quality meat (suppliers to M&S) and Yew Tree diary for milk.

The hotel group received the Good Egg award in 2012 for using only free-range eggs, and was awarded the Best Breakfast title at the Menu and Innovation and Design Award (MIDAS) and Scottish Hotel awards 2012.

Macdonald Hotels & Resorts was also proud to receive the award for the Best Hotel Group 2013- 14, the second time in five years. ­Callum's passion for exquisite food and commitment to exceptional service is truly at home here.
