Menus adapt with the seasons, reflecting the best nature's
larder has to offer throughout the year, with a heavy Scottish
influence accented by contemporary twists. Wares' signature style
has been recognized with a host of accolades and, this year, the
restaurant was awarded a second AA rosette in 2013, marking a
significant achievement for the hotel.
With the award-winning Jeremy Wares at the helm, the team have
developed the restaurant's offering to a consistently high
standard, reflecting the Macdonald Hotels & Resorts commitment
to sourcing the finest, freshest ingredients from around the
Wares was brought on board in 2012 to bring a fresh pair of eyes
to the team, along with a wealth of experience having spent over 20
years in the industry. He has worked in some of the best
restaurants in the world and had the pleasure of cooking for a host
of celebrities and well-known figures including the late Princess
Diana, President Mitterrand and Hollywood greats Michael Caine,
Liam Neeson and the actress Joanna Lumley.
Throughout his career he has worked some of the most well
regarded names in the industry including Monsieur Le Divellec who
is recognized as one of the most famous chefs in France, and has
achieved a host of awards including: numerous AA Rosettes;
Restaurant Chef of the Year 1998 at the Scottish Chef Association
awards and in 2004 he became Master Chef of Great Britain whilst at
his critically acclaimed restaurant 63 Tay Street, Perth.
Jeremy's continued success has come in the face of adversity;
the talented chef was diagnosed with Parkinson's at the age of 36 -
one of the youngest cases in Scotland. Yet the award-winning chef
is undeterred and determined to fully realise his vision and
ambitions in the kitchen.
