Ivor is a firm believer in using the finest seasonal ingredients
to create memorable dishes, and his unwavering commitment to
quality, seasonal and fresh produce typifies his grounding in the
company's ethos when it comes to superb food.
Ivor joined Macdonald Hotels in 1996 and has worked at many past
and present Macdonald Hotels including Ardoe House. His long
commitment and years of expertise bring a consistently high quality
to his dishes.
It hasn't all been local for Ivor, though - he has worked as far
afield as Sydney in Australia, as well as in Edinburgh and North
East England, gaining further experience and ideas.
Ivor's exquisite work is well-respected. He works with local
colleges to develop young talent, and Macdonald Cardrona Hotel,
Golf & Spa is a Centre of Excellence for breakfast using
top-quality, responsibly-sourced ingredients right down to the eggs
- the hotel was given the Good Egg award in 2012.
