Macdonald Hotels &
Resorts, the UK's largest independent hotel group, has
appointed renowned hotel food and beverage leader Keith Shearer as
Group Executive Chef.
Keith has over 20 years of experience in the hospitality
industry, having developed the food and beverage offering at
Malmaison and Hotel du Vin.
Commenting on his appointment, Keith Shearer said: "I'm very
proud to be part of the Macdonald Hotels & Resorts group and am
looking forward to working with our talented food and beverage
teams and our award-winning restaurants,
including over 45 AA Rosettes."
"The group's robust policy for only the finest seasonal
ingredients and sourcing the best produce available is a breath of
fresh air, and is what sets the group apart in the industry.
These values absolutely align with my own and that's what is so
exciting about the new role.
"My philosophy when it comes to food is uncomplicated. I believe
in developing a strong understanding of the ingredients you are
working with, using the best seasonal produce and creating simple
dishes that people really want to eat."
With a strong track record in managing restaurants from concept
through to launch, Keith handled the high profile openings of both
Bistro du Vin in London's Soho and an exclusive afternoon tea
offering at Liberty London.
Keith added: "From the minute I stepped into a bustling kitchen
I was hooked. Growing up in Edinburgh, the restaurant business was
an exciting way to develop my career and travel the world. I'm now
very excited to get back to my roots working with the best
ingredients in a great Scottish company."
"My role will involve working alongside our chefs to create an
even stronger guest experience through training, menu creation and
new developments, which I'll be able to talk more about soon."
Keith's experience also includes over two years with DeVere
Group where he directed all food and beverage operations.
Commenting on the appointment, Ruaridh Macdonald, Deputy Chief
Executive, said: "I am very pleased to announce that Keith Shearer
has joined the Macdonald
Hotels & Resorts family. This is a significant hire for us
and Keith's strong track record and passion for the best seasonal
produce will further strengthen our commitment to providing the
