Macdonald Hotels & Resorts, the UK's largest privately owned hotel group, has further added to its complement of award-winning restaurants led by Michelin starred chefs with the recent opening of Jeremy Wares at Houstoun House, just ten minutes from Edinburgh.  

39 year-old Wares' restaurant within the historic 70-bedroom hotel comes after over twenty years experience working in some of the world's top restaurants.  His impressive CV includes having cooked for the likes of the late Princess Diana, President Mitterrand and Hollywood greats Michael Caine, Liam Neeson and the actress Joanna Lumley.

Wares commented: "I was keen to work with Macdonald Hotels & Resorts to serve locally sourced cuisine with a modern twist.  We both share the same belief and passion for offering diners flavoursome dishes based on only the finest freshest and ideally locally sourced produce, always prepared from whole raw ingredients.  

Diners can enjoy gastronomic delights such as freshly caught scallops in red wine risotto, with tomato pesto; roast haunch of venison and stalker pie with sticky red cabbage, and his special take on the traditional Scottish dessert cranachan.

Wares' continued success has come in the face of adversity; the talented chef was diagnosed with Parkinson's at the age of 36 - one of the youngest cases in Scotland. Yet the award winning chef is undeterred and determined to fully realise his vision and ambitions in the kitchen. 

Wares added: "I can't put in the 16-hour days required to run a top restaurant any more, but that doesn't mean I have to hang up my chef's hat. Jeremy Wares at Houstoun House is a tremendous opportunity to further indulge my passion for cooking delicious dishes in a bustling restaurant environment.

Jeremy Wares at Houstoun House, just two minutes from the M8 motorway, is located within the beautiful interior of Macdonald Houstoun House Hotel that dates back to the 16th century and once hosted Mary Queen of Scots. Set in 22 acres of mature woodland and grounds, guests enjoy luxurious stylish rooms, WiFi throughout, conference space for up to 400 delegates and access to a luxurious Vital Health & Wellbeing Club and Spa.

Group-wide, Macdonald Hotels & Resorts' restaurants have now been awarded 45 AA Rosettes, reflecting the quality of food offering to be enjoyed by business, conference and leisure guests.

Wares previously owned the award-winning 63 Tay Street restaurant and The Anglers Inn, Guildtown (both Perthshire). The latter won the talented chef 'Scottish Pub Restaurant Caterer of the Year Award' in 2010.
