Callum Dow has been appointed the new head chef at Macdonald
Inchyra Hotel & Spa by Polmont in East Central Scotland.
With over ten years experience in the hospitality industry,
Newcastle born Dow joins Macdonald Hotels & Resorts, the UK's
largest privately owned hotel group from his previous role as head
chef at Dakota in South Queensferry, north of
Edinburgh.
Dow said: "This is a great opportunity for me to come to
Scottish Steak Club at Macdonald Inchyra Hotel and take it to the
next level. I really thrive on the variety and challenges
presented by working within one of the group's largest hotels; in
one day the team can be preparing a business breakfast for twenty,
canapés for a reception of 150 or a conference dinner for over 700
delegates."
Macdonald Hotels & Resorts' promise to serve only the finest
freshest produce, with flavoursome dishes always prepared from
whole raw ingredients and sourced locally and seasonally when
possible. Dow commented: "The sirloin steak is one of our most
popular dishes and like all the food on our menu, is of exceptional
quality. All the steaks are sourced from Aberdeen Angus cattle and
aged for 21 days. We cook the steaks on a Josper Grill, which works
the same as a barbeque and retains the succulence and flavours of
the meats.
"Other popular dishes include our fresh wild fish, which is
again sourced locally. Of course, many of our overseas (and
Scottish) guests also can't resist trying our haggis, neeps and
tatties."

chef John Paul (Macdonald Marine Hotel & Spa) as a
colleague. He's an inspiration and I want to ensure I am
equally successful in my career."
Commenting on Dow's appointment, Brett Ingle, General Manager at
Macdonald Inchyra Hotel & Spa added: "We are pleased to welcome
Callum to the team. He is very ambitious and talented, having
secured his first position as head chef at only twenty-three. We
particularly liked his ideas for further developing the menu and
offering within our highly successful Scottish Steak Club and we

Last year Macdonald Inchyra Hotel & Spa completed a £4
million refurbishment that included the launch of a Scottish Steak
Club restaurant and investment in bedroom and spa facilities.
