39 year-old Wares' restaurant within the historic 70-bedroom hotel comes after over twenty years experience working in some of the world's top restaurants.  His impressive CV includes having cooked for the likes of the late Princess Diana, President Mitterrand and Hollywood greats Michael Caine, Liam Neeson and the actress Joanna Lumley.

This month 40 apprentices from across Scotland received a warm welcome from David Guile, Chief Executive of Macdonald Hotels & Resorts as they celebrated 'graduation' within the hotel-groups Modern Apprenticeship (MA) programme.
