Scotch Pancakes with Blueberries, Crispy Streaky Bacon and Maple Syrup

Ingredients

  • 1 tbsp baking powder
  • Pinch of salt
  • 1 tsp caster sugar
  • 2 free range eggs
  • 30g butter melted and cooled
  • 300ml of milk
  • 225g plain flour

To finish

  • 100ml of Maple syrup
  • 200g blueberries
  • 8 rashers of streaky Scottish bacon


Method

  1. Place all pancake ingredients in a food processor and pulse until you get a smooth batter
  2. Heat a non-stick pan and drop 1 serving spoon of banner into the pan, wait until bubbles have formed then turn the pancake over.  You want to have the pancake golden brown.
  3. Continue until you have used all the batter.
  4. Place the bacon under a hot grill until crispy, place two rashers on a plate, drizzle with maple syrup and serve with some blueberries.
