Scotch Pancakes with Blueberries, Crispy Streaky Bacon and Maple Syrup
Ingredients
- 1 tbsp baking powder
- Pinch of salt
- 1 tsp caster sugar
- 2 free range eggs
- 30g butter melted and cooled
- 300ml of milk
- 225g plain flour
To finish
- 100ml of Maple syrup
- 200g blueberries
- 8 rashers of streaky Scottish bacon
Method
- Place all pancake ingredients in a food processor and pulse
until you get a smooth batter
- Heat a non-stick pan and drop 1 serving spoon of banner into
the pan, wait until bubbles have formed then turn the pancake over.
You want to have the pancake golden brown.
- Continue until you have used all the batter.
- Place the bacon under a hot grill until crispy, place two
rashers on a plate, drizzle with maple syrup and serve with some
blueberries.
