Baked Crab with a Smoked Bacon & Herb Crust


  • 4 x Whole Live Crabs 250-300g each or slightly smaller pre cooked
  • 6 x Rashers of Smoked Bacon Finely Diced
  • 2 x Cloves Garlic
  • 2 x Shallots
  • 6 slices of White Bread
  • 2 x Fresh Red Chilli
  • 1/2 bunch Parsley
  • 1/2 bunch Chervil
  • 2 x Lemons
  • Salt & Pepper
  • 75ml Vegetable Oil



If using live crabs, boil a large pan of water (ensure you allow space for the crabs) add a good pinch sea salt and plunge the crabs into the boiling water, cook for 10-12 minutes depending on size. Remove from boiling water and plunge into cold water. Now "pick" the meat and flake.

Retain the main shell and wash.

Remove crusts from bread and "blitz" for a few seconds in a food processor.

Heat oil in heavy pan add bacon and finely chopped shallot, chilli, garlic, leave to sauté until cooked, remove from heat and add breadcrumbs and chopped herbs, juice of 1 lemon, mix and season, set aside.

Lightly season the crab meat, place in the shell with a little liquid for moisture, top with the breadcrumb mixture, place in the Oven on a high heat for about five minutes serve with Lemon wedge and tossed green salad.
