Our overall development programme is called 'Stairway to
Success'. It's designed to help our people become managers, and
equip managers, supervisors and employees with the skills and
knowledge they need to progress to more senior positions.
The development programme is broken down into five levels. It
starts with a one-day induction, and continues through supervisor,
head of department, operational manager and up to general manager
training. We run in-house bespoke training courses, external
courses as well as e-learning covering subjects such as:
- Enquiry handling
- Train the trainer
- Leading and developing teams
- Finance workshops
- Wine and spirits education

MA Programme
Maintaining quality and developing our people means measuring
ourselves against recognized outside standards.
Our Modern Apprenticeship programme is open to all employees. We
run approximately 60 apprenticeships at various levels (1-3) and
all for individuals aged from 17 years-old. On successful
completion of the 12-18 month training, graduates receive a
nationally recognised award which reflects their skills and level
of competence within their chosen role, from food and beverage to
housekeeping and front office.
Institute of Leadership and
Management
This programme covers a full range of management competencies
from supervisory up to general manager level. The ILM programme is
nationally accredited starting at Level 2 for supervisors, Level 3
for heads of department and Level 5 for senior managers. View Sean

Apprentice Chef Programme
Our food quality is key to our success. We use the finest of
ingredients and have won numerous AA Rosettes and other awards for
its standards. Macdonald Hotels Chef's Apprenticeship Scheme for
under 24 year-olds is one way we keep up the standard; our
apprentices spend time learning the necessary skills needed to
deliver the standards we set. Well over 200 young people have
already taken part in this scheme.
Macdonald Hotels are proud to offer an industry leading Chef
Modern Apprentice Programme in Scotland working in partnership with
Tennent's Training Academy. This will be open to any chefs
within the group who are under 25 years of age and don't currently
have their SVQ Level 3 in Professional Cookery.
The first intake of eight apprentices will be put onto the
finest training programme in Scotland. The programme is a one
year course, with the first launching at Macdonald Inchyra Hotel
& Spa in February 2013. During the year they will be offered a
wide range of learning and development courses, giving the tools to
enhance skills and further their careers.
The programme includes:
- Monthly visits from a trainer/assessor.
- 10 free teaching days at the Tennents Training Academy covering
different topics each month
- Intermediate Food Hygiene Certificate
The programme culminates in a competition for the Modern
Apprentice of the year with the chance to win great prizes
including the opportunity to work with some of the best chefs in
the UK.
Senior Operations Managers Development Programme
Aimed at our high flyers of the future, this programme supported
by a structured training plan and assigned a Mentor from the Senior
Management team. This 12 month programme equips the candidates with
the tolls to become a 1st appointment general
manager.
